The Lion's Mane owes its name to its unusual shape. It is roundish-oval or heart-shaped and covered on the outside with many densely packed long spines. The Chinese use this apt name because of this. However, it is also known there as monkey head mushroom, as the fruiting body resembles a hairy monkey's head.
The Lions Mane is considered a popular and exquisite edible mushroom in China. Its unique taste and extremely decorative, coral-like appearance make it a sought-after delicacy. It is one of the few mushrooms that has a strong lobster aroma when cooked.
In Europe, the Lions Mane is not very well known, although it is native to parts of the continent, including Austria. In the wild, this mushroom is found in deciduous forests in Europe, North America, and Asia (especially China and Japan). The Lions Mane is rich in potassium, zinc, iron, germanium, selenium, phosphorus, and contains all essential amino acids as well as polysaccharides and polypeptides.

The mushroom spawn should be processed immediately after delivery.
If the product cannot be processed immediately, it can be stored in the refrigerator at 4 °C for up to 2 weeks.
