This strain is a cold-weather shiitake mushroom. The special feature of the Shiitake “Cold” is its relatively low fruiting temperature; it forms fruiting bodies between +5 and +15 °C (optimum +8 to +10 °C). However, it should be noted that at low temperatures, growth is somewhat slower and the harvest yield is slightly lower compared to other Shiitake strains. It is very popular for outdoor cultivation in order to extend the harvest season by a few weeks. The Shiitake “Cold” has also proven itself in cultivation at higher altitudes.
The Japanese name “Shiitake” is composed of “Take” (= mushroom) and ‘Shii’ (= Pasania tree) and literally translates as “mushroom that grows on trees.” Shiitake mushrooms are native to Japan, Korea, and China and have been known to the population for their properties for around 2000 years. Their smell is strongly reminiscent of garlic and is due to a substance called lenthionine. Shiitake mushrooms are considered the most sought-after edible mushrooms after button mushrooms.
